You don't have to spend a lot of time in the kitchen making raw desserts. I am a no-nonsense kind of gal. I was craving some rich "chocolate-ty" goodness; so, I whipped up this raw chocolate mousse pie in 10-minutes.
In a high powered blender (like a Vitamix) or mixer add:
One whole avocado
1/4 chia seeds (grind in the coffee grinder first)
1/4 cup pecans (grind in the coffee grinder first)
1/2 cup of nut milk, or coconut milk, or any kind of milk such as rice or soy
dash sea salt
dash vanilla
4 tablespoons cocoa powder (I used raw cacao powder)
1/4 cup sweetner (I used raw honey and pure maple syrup and additional stevia). You can also use raw agave, or raw sugar, etc...add to your taste
Throw everything into a high powered blender or mixer on high, and slowly add two tablespoons of room temperature coconut oil for added richness.
Add to a pie plate sprayed with oil, or put in pudding dishes.
For garnish, I grinded up some raw almonds, or use whipped cream. Put into the freezer to make a pie or leave in the fridge as a mousse pudding. Enjoy!
